Three Apprentice Chefs are sharpening their knives, researching their produce and perfecting their recipes in the lead-up to the Grand Final of the ETC Apprentice of the Year Cook-off competition to be held at Coffs Central on Thursday 11 July. The event will be held from 11am – 1pm outside Kmart at the top of Coffs Central Shopping Centre. Find out more about the event

 Third year Apprentice Sarah Townsend will be representing the Lower Mid North Coast and her employer Club Taree and is looking forward to showing off her culinary skills in the Cook-off.

Hi Sarah, tell us a bit about yourself

“I’ve been in Hospitality for five years – since I was 16. As soon as I finished School I started my Apprenticeship at Club Taree. It’s a lot more hectic than I thought it would be, but it’s great, I love it. 

I enjoy being creative in the kitchen. You can do so much stuff, it’s just amazing.”

How are you preparing for the upcoming Grand Final?

“I’m still tweaking my recipe and experimenting with different elements at the moment. My employer is really happy that I made the Grand Final. They’re helping me with anything I need to prepare, so I can win this.” 

What does the future hold for you?

“I’ve got about six month left of my Apprenticeship. After that, I’d like to move towards baking and desserts, like a pastry chef.” 

What’s your experience been like with ETC and the Yes Chef program?

“My employer is over the moon with the results I’ve been getting through ETC. We had been linked to another training provider previous to this, but weren’t happy with the service. ETC is definitely more hands-on and a lot more personal. They check up on me regularly to see how I’m going. 

I love Nick the ETC Trainer. He is such a good teacher and is really helpful. He will bring me all these ideas to help me with my assessments and send me emails.” 

What’s your advice for job seekers who may be considering a Chef Apprenticeship?

“Keep your options open and look into everything. Volunteer for a day of work experience so you can get a feel for the job and the establishment.”
