Start with the Cookery Pre-Apprenticeship Program where you will get opportunities to engage with employers and build your pathway into a Commercial Cookery Apprenticeship – Certificate III in Commercial Cookery SIT30816.


Cookery Pre-Apprenticeship Program

(Certificate II in Kitchen Operations SIT20416)

  • 12 week program – 3 days per week in a real commercial kitchen
  • Opportunities to engage with employers and possible pathway into employment, Traineeship or Apprenticeship.

Learning covers:

  • Preparing dishes using basic cookery methods
  • Make sandwiches and appetisers
  • Working effectively in a commercial kitchen
  • Menu planning and costing
  • Food hygiene
  • Cleaning and preparation
  • Safely use preparation equipment

This qualification provides a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafés, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.

Possible Jobs include:
Café assistant, Kitchen hand, Breakfast cook, Catering assistant, Fast food cook, Sandwich hand and Takeaway cook.
